Cream Cheese Frostings for cake fillings and cupcakes

Cream Cheese Frosting 1

1/2 cup unsalted butter, softened
1 8-ounce package cream cheese, softened
1 teaspoon pure vanilla extract or to taste
4 cups (1 pound) confectioners' sugar, sifted

In a bowl beat together the butter and cream cheese with an electric mixer set at medium speed until light and fluffy. Add 1 teaspoon pure vanilla extract. Beat in the confectioners' sugar, 1 cup at a time. Continue beating until light and creamy. Yields about 3 cups.

Cream Cheese Frosting 2

8 ounce cream cheese; softened
1 egg (egg safety)
1/3 cup sugar

In small mixing bowl, use electric mixer to combine cream cheese, egg and sugar.
