Pita Bread and Hummus

Pita Bread

2 1/4 cups lukewarm water
1/2 oz Active dry yeast
Pinch Sugar
8 cups All Purpose Flour
2 tsp Salt
1/4 cup Olive oil
1 cup Cornmeal or flour

 

In a bowl mix the water, yeast, oil, and sugar together. Then add flour and bring dough together. When the dough is mixed turn out of the bowl and onto a floured work surface. Knead the dough till nice and soft for about 10 minutes. Then shape into a ball and place back in the bowl and let rise in a warm place till it doubles in volume. You could also use a stand mixer to mix the dough.

Punch dough down and divide into 8 balls. Roll them out to about 1/8 inch thick circles. Let sit uncovered for 20 minutes, this is what helps create the pocket. Bake on sheets that have flour or cornmeal so the bread will release easily. Bake about 3 to 5 minutes each side at 400 F. Remove from oven and let cool.

Hummus

2 cans Chickpeas
2 tsp Salt
3 cloves Garlic
1/4 cup Lemon juice
1 cup Taratoor Sauce (Taratoor Sauce is similar to tahini, which is a sesame seed paste)

Place all ingredients into a food processor and puree until it is a smooth paste. Garnish with some extra virgin olive oil and paprika.
