Jamaican Meat Patties
This recipe was sent in from Nad and paul, daily recipe subscribers.
Crust:
4 Cups Flour
4 tsp. baking powder
2 tsp. curry powder
1 tsp. salt
1 tsp. tumeric
1 1/3 cup shortening
1/2 cup butter
1 cup cold water
Stir together flour, baking powder, salt, curry and
tumeric. Add shortening and butter. Mix until mixture resembles small chunky pieces. Stir with a fork and add water slowly until you have a soft dough.
Gather, wrap and refrigerate at least 1 hour (will last 5 days.)
FILLING:
3 Tbs. vegetable oil
2 large chopped onions
2 cloves garlic
2 lbs. lean ground beef
3 Tbs. curry powder
1 1/2 tsp. thyme
1 Tbs. cayenne pepper
2 cups water
1 cup fine bread crumbs
In a large skillet heat oil over medium heat.
Cook onions and garlic until soft. Remove onion mixture and set aside. Brown beef, drain fat, stir in the onion mixture, curry, salt, thyme, pepper and cayenne. Cook 3 minutes.
Pour in the water, bring to a boil, reduce heat and cook 5-10 minutes. Stir in the bread crumbs.
Mixture can not be runny. Let cool.
On floured board roll out pastry, cut into 4" circles (cottage cheese
container size.) After all the circles are cut, take one at a time, and spoon on enough filling to cover half of the circle. Fold the other half over and seal the edges by crimping with a fork.
Place in preheated oven 325 and bake for 25 minutes or until golden brown.
May be frozen before or after baking. These little patties are a big hit, so tasty.
