Sesame Chicken Salad
Serves 4
1 tbs. sesame seeds
3 whole chicken breasts
6 cups water
2 Tbs. soy sauce
1/2 tsp. salt
1/2 tsp. Chinese - five spice powder
1 head romaine lettuce
1 tbs. sesame oil
1 Tbs. vegetable oil
1/4 tsp. ground ginger
1/8 tsp. pepper
Preheat oven to 350 degrees. Sprinkle sesame seeds in a baking pan and bake in oven until golden. About 5-8 minutes.
Combine chicken, water, 1 Tablespoon of soy sauce, salt, and 5 spice powder in a large saucepan. Cover and bring to a boil. reduce heat and simmer 15-20 minutes. Remove from heat.
Let sit for about 30 minutes.
Remove chicken from pot. Remove and discard bones from chicken. Cut chicken into 1/2 inch wide slices.
Mix remaining 1 tablespoon soy sauce, sesame and vegetable oils, ginger and pepper in a large bowl. Add chicken and toss to coat.
Chop lettuce up and place in a large bowl. Toss chicken and dressing mixture with salad. Sprinkle with sesame seeds.
