Cranberry Upside Down Muffins
about 12-14

2 cups flour
1 tsp. baking soda
1 tsp. salt
3/4 cup sugar
1 egg
1/3 cup orange juice
3 Tbs. white vinegar plus water to make 2/3 cup
1/4 cup melted shortening
1 cup halves or coarsely chopped raw cranberries

1 cup butter
1/2 cup sugar
1/8 cup cinnamon
Pre-heat oven to 350.

In a large bowl, Sift together flour, soda, salt and sugar.
In a small bowl, beat egg and add liquids. Add melted shortening to the egg mixture.

Add all to flour mixture. Stir until flour is just dampened.
Add cranberries. Stir just enough so that it is blended well.

For smear, mix butter, sugar, and cinnamon in a small bowl. Take a glob of smear and rub it around each muffin hole. Fill muffin holes with muffin mix.

Bake at 350º for 30-40 minutes.
Remove muffins from pan immediately by flipping pan over and letting muffins fall out onto a clean surface. If you do not remove them they will stick to the pans.
