Blintz Souffle
serves 12
Batter:
1/2 cup butter, softened
1/3 cup sugar
6 eggs
1 cup flour
2 tsp. baking powder
1 1/2 cups sour cream
1/2 cup orange juice
Filling:
1 8 oz pkg. cream cheese
1 pint ricotta cheese
1 Tbs. sugar
1 tsp. vanilla
2 egg yolks
Preheat oven to 350 degrees.
In a small bowl, beat cream cheese and tablespoon of sugar until smooth. Add ricotta cheese, egg yolks and vanilla. Mix and set aside.
In a large bowl, cream butter and 1/3 cup of sugar. Add eggs and beat well.
In another large bowl, mix flour and baking powder. Add flour to
egg mixture alternately with sour cream and orange juice. Stir only until moistened.
Spray a 9"x13" inch baking pan with cooking spray. Pour 1/2 of batter into the pan and spread filling over batter. Cover with remaining batter.
Bake at 350 degrees for 50 minutes. Serve with warm fruit sauce and sour cream or yogurt.
