Grape Leaves with Rice
makes 30
2 cups rice
1/2 cup parsley, chopped
1/4 cup lemon juice
1 tsp. black pepper
1 cup oil grape leaves (buy pint sized jar at grocery store)
1/4 cup lemon juice
5 large onions, chopped
1/4 cup mint, chopped and fresh
3 (8 oz.) cans tomato sauce
1 green chile, chopped
1 Tbs. salt
Preheat oven to 350 degrees.
In a saucepan and on medium heat, saute onions in oil. Add rice, parsley, 1/4 cup lemon juice, 2 cans tomato sauce, pepper, salt, mint, and green chile along with 2 cups water.
Cook until water is absorbed. While this is cooking drain grape leaves.
Cool rice mixture and spoon 1 tsp. rice into each grape leaf. Tuck the sides in and roll up. Place in baking dish.
Mix together 2 cups water, 1 can tomato sauce and 1/4 cup lemon juice. Pour over the grape leaves.
Bake 1 1/2 hours at 350 degrees. Serve warm or cold.
