Peanut Butter Cookies (with Low-fat version)
Makes 3 dozen
1 cup peanut butter
1 cup brown sugar
1 cup sugar
3/4 cup shortening
2 eggs
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
Preheat oven to 375.
In a large bowl, mix together peanut butter, brown sugar, sugar, and shortening. Add eggs and beat well. Gradually add the dry ingredients and mix well. Form a ball about the size of a teaspoon and place about 2" apart on cookie sheet. with your fingers flatten, the cookies slightly.
Bake at 375 degrees for about 9 minutes. Do not over bake. These should come out soft. Cool.
Low-Fat version
makes 4 dozen
1/2 cup reduced fat peanut butter
1/4 cup shortening
3/4 cup brown sugar
1 egg
3 Tbs. fat-free milk
1 Tbs. honey
1 Tbs. vanilla
1 2/3 cups flour
1 tsp. baking soda
1/4 tsp. salt
Preheat oven to 350 degrees
In a large bowl, mix peanut butter and shortening until creamed. Mix in brown sugar. Then Beat in egg, milk, honey and vanilla. Mix in flour, baking soda and salt.
Form a ball about the size of a teaspoon and place about 2" apart on cookie sheet. with your fingers flatten, the cookies slightly. Bake at 350 degree for about 10 minutes. Cool.
