Zesty Fish Fillets 
Yield: 6 servings

3 tablespoons butter or margarine, melted 
2 pounds fish (bass, catfish, cod, orange roughy, salmon, or tuna)
filleted, in 6 portions about 1 inch thick 
2 tablespoons orange juice 
2 teaspoons grated orange zest 
1 teaspoon salt 
1/2 teaspoon ground nutmeg 
1/2 teaspoon black pepper

Preheat the oven to 350 degrees.  Using 1 tablespoon of the melted butter,
lightly grease a large baking pan.  Place the fish in a single layer in the
pan.  In a small bowl, mix together the remaining 2 tablespoons butter, the
orange juice, orange zest, salt, nutmeg, and pepper.  Pour the sauce over
the fish.  Bake for 10-15 minutes.  Do not overcook.
