      Yield: 4 Servings
      1 c  Plain yoghurt
    1/4 c  Finely shredded cucumber;
      1    Clove garlic; minced
      2 ts Olive oil
    1/4 ts Salt
    1/4 ts Pepper
           Chopped fresh mint; optional
  Combine all ingredients in a medium bowl; stir well. Cover and chill
  thoroughly.  Yields: 1 1/4 cups.
