Title: Sunburst Salad Categories: Salads, Fruits, Dkuhnen msn Yield: 5 Servings 3 c Cooked whole grain 1 Orange, cut in half cross- Wise, with segments removed, As you would with a grape- Fruit (sqeeze juice from Pulp onto the grain) 1 Cucumber,peeled, seeded and Diced 4 Scallions, sliced 2 T Chopped fresh parsley 1/2 c Dried fruit, soaked in hot Water to soften, then sliced 1/4 c Toasted nuts or seeds 3 T Lemon juice 1 T Dijon mustard 2 T Olive oil 1/4 t Ground cinnamon 1 t Chopped fresh mint, or 1/3 Teaspoon dried Combine the whole grain, orange, cucumber, scallions, parsley, dried fruits, and nuts. Whisk together the remaining ingredients and pour over the salad. Toss to combine. Allow the salad to mellow and chill for at least 1 hour before serving.
