Title: Smoked Salmon and Pasta Cocktails

      Yield: 4 Servings
 
      4 oz Fresh rotini
      4 T  Light mayonnaise
      4 T  Low-fat sour cream
      2 T  Snipped chives
           Salt and freshly ground
           Black pepper to taste
      4    Endive or frisee leaves,
           Roughly chopped
      6 oz Smoked salmon, thinly sliced
           Into strips
      2 T  Chopped fresh dill
           Grated rind of 1/2 a lemon
           Dill sprigs for garnish
      4    Wedges of lemon for serving
 
  Cook the pasta in boiling, salted water for 3 minutes. Drain and
  cool. Mix the mayonnaise, sour cream and chives with the pasta. Add
  seasonings to taste. Arrange the lettuce in four glass dishes and
  divide the pasta between them.  Mix the smoked salmon with the dill
  and lemon rind and arrange on top of the pasta. Garnish with sprigs
  of dill. Serve with a lemon slice on the edge of each dish. Source:
