Title: Sage Vinegar

      Yield: 2 Cups
 
    1/2 oz Fresh sage (1/2 cup chopped
           Leaves)
      2 c  White wine vinegar
 
  Rinse and chop the sage and put it in a very clean mason jar.  Warm
  the vinegar until it is warm to the touch but not hot and pour it
  over the herbs.  Let cool, cover, and label with the date.  Let stand
  in a cool, dark place for 2 weeks.  Strain through a
  cheesecloth-lined funnel into a very clean bottle and cover or cork
  tightly.  Store in a cool, dark place. Source:  'Essential Flavors'
