Strawberry Pecan Streusel Muffins

Yield: about 12 muffins

Batter:
1 1/2 cup Unbleached Flour
1/2 cup Maple Sugar
1/4 teaspoon Salt
2 teaspoon Baking Powder
1 teaspoon Cinnamon
1 Egg
1/2 cup Butter
1/2 cup Water
1 1/4 cup Strawberries diced
1 teaspoon Lemon Zest

Topping
1/2 cup Pecans; Chopped
1/2 cup Maple Sugar
1/4 cup Unbleached Flour
1 teaspoon Cinnamon
1 teaspoon Lemon Zest
2 teaspoon Margarine

Creaming method. Fill sprayed muffin pan 2/3.

Sprinkle topping on top of each muffin and bake at 375 degree F for about 20 minutes.
