Chocolate Cake Frosting and Raisin Coffee Cake

CHOCOLATE CAKE FROSTING

Mix and heat:

  • 1 stick oleo
  • 4 Tbs. cocoa
  • 6 Tbs. buttermilk
  • Take off heat and add:
  • 1 tsp. vanilla
  • 1 box powdered sugar
  • 1 cup chopped nuts

Mix and pour hot over hot cake. Cool. Top with foil and refrigerate immediately.

RAISIN COFFEE CAKE

  • 1 can raisin pie filling (or any flavor of pie filling)
  • 4 eggs
  • 1 cup +2 Tbs. sugar
  • 1 cup vegetable oil
  • 2 cups flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1/2 tsp. cinnamon

Beat eggs and 1 cup sugar well. Add oil then dry ingredients. Spread 1/2 of batter in a 8 inch square pan. Spoon over the filling. Spoon over the rest of the batter. Top with cinnamon and 2 Tbs. sugar. Bake 350 F. 45 min.
