Mile High Lemon Meringue Pie
1/3 cup corn starch
1/3 cup flour
1-1/4 cups sugar
1/4 tsp. salt
2 cups cold water
Cook over med flame for 4 minutes. Beat 5 egg yolk after the cornstarch mixture has
thickened. Dip the wisk in the mixture & put in egg yolk mixture. Otherwise the eggs
will curdle. Add 1/2 cup fresh lemon juice & 2 Tbls. lemon peel and 4 Tbls. unsalted butter.
Pie Crust.
2 cups flour
3/4 cup crisco
4 tbls. water
1 tsp. salt.
Meringue
7-Lg egg whites. beat w/wisk or mixer going from med to high. 1/2 tsp cream of tartar.
pinch of salt, 3/4 cup of sugar. Add sugar little by little as egg whites get frothy add
sugar. Add 1 tsp vanilla. Cover entire pie with meringue making sure to secure ends.
Bake at 375 degrees for 8-10 min. Cool two to three hours.
Then sit down with a nice cup of coffee or tea and chow.
