Title: Honey-Glazed Chicken Bites Categories: Poultry, Chicken, Dkuhnen msn Yield: 4 Servings 4 lg Baking potatoes 12 oz Cooked warm chicken, skinned And cut into chunks 1 bn Spring onions, roughly Chopped 2 oz Walnuts, roughly chopped 3 oz (75ml) clear honey 1/2 t Cayenne pepper Salt and pepper to taste Bake the potatoes in a 425F oven for 1 to 1 1/4 hours. (Be sure to prick skin with a fork first.) In a large mixing bowl combine remaining ingredients and carefully mix together. When the potatoes are done, cut a deep cross almost through them and allow them to fan out. Melt a little butter into each potato and spoon on the topping. Serving idea from the author: this is delicious for lunch on a hot summer's day if served with a fresh green salad and a glass of chilled white wine.
