Title: Grilled Portobello Mushrooms Categories: Appetizers, Vegetables Yield: 8 servings 8 Portobello Mushroom Caps 1/2 c Balsamic vinegar 3 T Chopped fresh cilantro 1 T Coarsely ground pepper 1 t Finely chopped garlic 1 t Salt 1 c Garlic flavored olive oil Clean mushrooms with soft brush or damp cloth. Remove stems and reserve for other use. Prepare marinade; Mix together vinegar, cilantro, pepper, garlic and salt. Gradually whisk in oil until mixture is thickened. Brush mushrooms all over with marinada, reserving extra marinade to use as a basting sauce. Arrange mushrooms gill-side up in shallow dish. cover loosely and let marinate in fridge for 4 to 6 hours. Place in grill basket or directly on grill over medium-high heat and cook 8 to 10 minutes per side or until tender, basting frequently with reserved marinade. Slice mushrooms but do not separate slices. Arrange on a large platter.
