Almond Crescents
Freezing suitable: bake from frozen, allowing 20-25 minutes
Yield: 20
5oz Blanched almonds
2oz Caster sugar
A few drops of vanilla essence
1 Egg white
1oz Plain flour
1 Egg
1oz Flaked almonds
2tbsp Milk sweetened with icing sugar 2X
Preheat the oven to 400F (200C) Gas 6.
Mix chopped almonds with caster sugar and vanilla essence.
Moisten with egg white until evenly combined. add flour and gather mixture together with
fingertips. Divide into "nut-sized" pieces. With lightly floured hands, roll
into small cigar shapes with pointed ends. Brush each one with beaten egg and sprinkle
with flaked almonds. Bend into a crescent shape.
Place on a greased baking tray and brush lightly with any remaining egg. Bake for about
10-15 minutes till evenly colored. Remove from oven and brush immediately with sweetened
milk. Using a palette knife of egg slice, carefully loosen crescents and transfer to wire
rack to cool.
