Chicken with Mushrooms

This recipe is brought to you from one of our daily recipe subscribers. Her name is Darlene Reischuck and she is from Troy, New York. She says this recipe is "easy, and only takes about 2 minutes in the morning
before you dash out of the house."

3 boneless chicken breast, cut in bite size pieces
12 oz mushrooms, sautéed in butter with 1/4 cup sherry (if you are in a real rush, you can use a can of mushrooms)
1 can condensed cream of mushroom soup
1 pkg. dry onion soup mix
1/2 cup milk

Wash chicken and cut into small pieces. Mix all ingredients in crock pot and put on low for 6-8 hours. Make sure chicken is cooked thoroughly before serving. 

You can serve this dish over rice or noodles. Very nice! I sometimes have to put my crock pot on a timer if I know that I will be really late, so everything is not over-cooked.

As a side dish, steam broccoli, Italian squash, or yellow squash and serve with butter and a little real parmesan cheese.

For a lower fat version use skim milk and low-fat cream of mushroom (or chicken) condensed soup.
