This is a light whole wheat bread.

Prepare sponge:

1/4 cup honey
2 1/2 cups milk, scalded and cooled to lukewarm
1 Tbsp. active dry yeast
2 cups unbleached white bread flour
2 cups whole wheat flour or proportion according to taste

Add to above, knead and let rise:

1 Tbsp. salt
1/4 cup butter, softened
1 cup wheat germ
1 1/4 cups unbleached white bread flour
1 cup whole wheat flour or proportion according to taste

Optional third rising.
Cut and shape into two standard 8-1/2" x 4-1/2" loaves.
Slit and glaze with butter and sesame seeds for topping.
Bake at 350 F for 35-45 minutes or test till done. You may remove loaves from baking pans 10 minutes early to brown thoroughly on all sides.
Cool thoroughly on wire racks.

Note: FDA labeling - this recipe can not be labeled as Whole Wheat Bread, as it contains white flour.
